Spiced Swede Soup
If you’re a soup fan you’re going to love this spicy soup. It is great for those cold and wintery days or evenings and warms your soul. This soup is great as part of your 5-A-Day veggies and you could make it even healthier by adding some chopped carrots.

Ingredients
- 700g Swede
- 2 medium Onions
- 2 cloves Garlic
- 400ml can of Coconut Milk
- 1 Vegetable Stock Cube
- 500ml Boiling Water
- 30g Tomato Purée
- 1 heaped tsp Paprika
- 2 level tsp Ground Cumin
- 1 level tsp Chilli Powder
- 200/250ml Milk
- 25g Butter
- a handful of Fresh Coriander
- Salt and Black Pepper to taste
Directions

Peel and chop the swede into small chunks, chop the onions and finely dice the garlic.

In a large saucepan melt the butter and add the onions, cook gently for 5 minutes.

Add the garlic, cumin, chilli powder, paprika and chopped swede – cook for a further 2 minutes.

Add the boiling water and crumble in the stock cube.

Pour in the coconut milk and tomato purée, then season with some salt and black pepper.

Bring to the boil, cover and simmer for 25 minutes until the swede is very tender.

Using an immersion blender liquidise the soup and add enough milk until you have a nice thick consistency.

Chop the coriander, sprinkle over the soup and serve with some crusty wholegrain bread.
